Oh, how I love this book! As a book buyer for a health food store, I am responsible for wading through the plethora of books available to locate what I think my customers will purchase. I read through this one at the bookstore and had to purchase it for my store. My customers love it. It is a little pricey compared to other cookbooks, but well worth every penny. In depth information is given on almost every ingredient, as if he assumes you have never heard of it. This can be somewhat condesending to those that cook extensively, like myself, but the title illicits that this is a primer so you should expect such. I love the fact that he provides alternatives to those that cannot locate ingredients locally. There is a great appendix in the back to locate suppliers and I encourage people to use it. Take this book on in steps and you will enjoy it the best. (show less)

This book is a great "how to" for the first time or inexperienced cook. Explains the very basics, as well as very creative recipes. I recommend this book to people who eat meat, but should increase their veggie intake.
