Kerala Rice Pudding

2 cups washed Basmathi rice
4 cups water
¾ cup Coconut milk
1 cup dark brown sugar
¼ cup Raisins
¼ cup Cashews
1 stick whole Cinnamon, broken up
10 pods Cardamom, pounded
¼ cup Ghee

Wash rice well, drain. Add water, coconut milk, brown sugar. Cover pot tightly and set on low to medium heat—or if cooking over a fire, keep the fire low, making sure that the embers can sustain a steady boil. In a separate pan, low flame, add ghee, cardamom, cinnamon, cashews, and lastly, raisins. Cashews should be brown, and raisins slightly plump. Cook for 25 minutes, stirring occasionally, and turn off when rice is soft. Add spices to the rice mixture in the last 10 minutes. Experiment with the sugar level, depending on your own taste. Turn off flame. Rice will continue to absorb liquid after you turn off the flame. You may want to add a little more coconut milk for a richer flavor, and a rice pudding texture. Serve warm. Serves 6.
